We love holidays around here and one of the big reasons is the excuse to have treats. We try to be healthy and limit our sweets to Sunday night ice cream and Family Home Evening treats, but we’ll use any excuse to bust out the sweets otherwise!
In preparation for Valentines Day this year, we’re planning to make a family favorite, chocolate cupcakes with cherry kool-aid frosting. Now, I’ll admit this isn’t for everyone. The hubby doesn’t care for them, but his definition of a real dessert does not include most “fruity” things. And these are definitely fruity!
Start with your favorite butter cream frosting recipe and add kool-aid powder or use mine!
Cherry Buttercream Frosting
(via Betty Crocker’s New Cookbook Vanilla ButterCream Frosting adapted by High Wire Living)
4 cups powdered sugar
1/2 package of cherry or black cherry kool-aid
1/2 cup stick margarine or butter, softened
1 1/2 teaspoons vanilla
1 to 2 tablespoons milk
Mix powdered sugar and margarine in medium bowl. Stir in vanilla and milk. Beat until smooth. Frosts one 13 x 9 inch cake or two 8 or 9 inch cakes.
Just remember to add half a package (or more if you want it REALLY tart & fruity) of cherry kool-aid when you add the powdered sugar. It will look a little purple when you poor it in, don’t worry, it will be BRIGHT pink! Make frosting as usual. Pipe on cooled cupcakes using a plastic baggie with the tip cut off and top with a cherry if you like.
