Happy Father’s Day! In honor of Father’s Day, I thought I would post one of my hubby’s favorite treats. He LOVES chocolate and peanut butter. But really, who doesn’t?
I learned to make these growing up, when my mother forced me to make delicious treats and copy down recipes for myself, thanks Mom! I still have my peanut butter smeared recipe card. They are super easy to make and double!
I’m embarrassed to say my family can put down the whole huge pan of these yummy treats in one sitting. And then be mad that I didn’t make more. So, only make these if you have a lot of people to share with or else you might eat the whole pan yourself. You’ve been warned! 🙂
School Lunch Peanut Butter Bars with Easy Chocolate Buttercream Frosting
3/4 cup peanut butter
3/4 cup butter
3/4 cup sugar
3/4 cup brown sugar
3/4 tsp soda
1/2 tsp salt
1 tsp vanilla
1 1/2 cups flour
1 1/2 cups oats
Cream together butters and sugars. Add dry ingredients. Schmear into a jelly roll pan. Bake at 350 degrees for 20 minutes. Allow to cool. Frost with Easy Chocolate Buttercream Frosting (below).
Easy Chocolate Buttercream Frosting (adapted from Betty Crocker)
4 cups powdered sugar
1/2 cup butter or margarine, softened
2 teaspoons vanilla
3 tbs unsweetened cocoa powder
3 to 4 tablespoons milk
In medium bowl, beat powdered sugar, cocoa powder and butter until blended. Stir in vanilla.
Gradually beat in just enough milk to make frosting smooth and spreadable. If frosting is too thick, beat in more milk, a few drops at a time. If frosting becomes too thin, beat in a small amount of powdered sugar. Frosts 13×9-inch cake generously, or fills and frosts an 8- or 9-inch two-layer cake.
