Summertime means time for fresh, yummy meals (that require less heating up of the kitchen!). I found myself especially craving some tasty, veggie-packed meals after getting back from a week long trip that included at least 4 fast food stops and lots of other junk food.
This was my solution for one night! Chicken Ceasar Salad Wraps. I got the idea from a restaurant on my old college campus that made really great salads and wraps, and decided to recreate it. It took no time to make, and is super flexible.
Chicken Ceasar Salad Wraps
1 package large tortilla wraps
1 head of lettuce of your choice
1/2 a cucumber, sliced
2 stalks of celery, sliced
1 c. shredded mozerella cheese
1 lb. cooked chicken
Ceaser salad dressing
Lay your tortilla wrap (mine were Mission brand sun dried tomato) out on your plate and top with lettuce, cucumbers, celery (for extra crunch!), cheese, and chicken. You could use any cooked chicken you want; I was going to use some shredded chicken I cooked in the crockpot, but I realized I had these grilled chicken strips in the freezer, so I went with those instead. Top with croutons and your choice of Ceasar dressing (I used Briana’s this time, but if you are trying to be even healthier, I also love the Kraft Ceasar Vinaigrette), and enjoy!
I was going to take another picture of the wrap all wrapped up…but let’s be honest, I always stuff mine so full that are busting at the seams and require 2 hands to hold (leaving no spares for the camera!).
I’ve made other variations of this that are really good too. My other favorite used bacon for the meat and ranch dressing, with some tomatoes added in. The possibilities are endless! What would you put in your wrap?Tags: kitchen, recipes
