I am feeling totally sugared out after Valentines and need to think about healthier food!  Something spicy and refreshing!  Elizabeth recently asked for this recipe again, so I thought I’d share one of our family’s favorites.  It’s had a few incarnations since my friend Wendy first introduced us to it when she brought us dinner after Joshua (the bean hater by the way!) was born.  Here is the latest:

Spicy Black Bean Salad

3 cans of black beans, rinsed and drained (or 4 to 5 cups of crockpot cooked beans) 
2 cups of frozen corn
1/2 diced green bell pepper
1/2 diced red pepper
dressing (honestly I just throw stuff in there and don’t measure, too lazy!)

1/2 cup olive oil
1/3 cup apple cider vinegar
1 tsp Italian dried herb mix
1/2 tsp chili powder
1/2 tsp garlic powder 
dash of cayenne powder
juice from one lime

salt and pepper to taste

Mix all ingredients for salad together. Mix dressing and poor over bean salad.  Add cilantro if you like it/have it. Chill until cold (overnight is best!). Serve with homemade salsa, sour cream, cheese, lettuce and tortilla chips. Yum!
