It’s time for dinner and you’d like to try something new.  You wonder if any of those recipes you pinned on Pinterest are as delicious as they look.  And because you’ve put off dinner at this point, you need something quick and easy…preferably using some pre-made rotisserie chicken from Costco or your local grocery store.  Am I right?  Yes, you are living my life.

So without further ado, here’s 3 delicious rotisserie chicken recipes that I found on Pinterest.  All of them received rave reviews from my husband and kids and are now part of our regular meal rotation.  Bon appetit!

Chicken Pineapple Tacos
This recipe comes from the Butter, With a Side of Bread blog.  These tacos are so good–party-in-your-mouth kind of good.  Try them.  You won’t regret it.  Here’s the recipe:  Chicken Pineapple Tacos
Avocado Salsa
This recipe from Chef In Training is delicious “as is” and would be great on chips or even really great on taquitos.  That being said, I changed it up a little bit by adding cut up rotisserie chicken into the salsa to make it more of a “meal” and served it with homemade cheese crisps.  Everyone in the family loved this! Salsa Verde Chicken Casserole
This casserole comes from Janet McCormick at Taste of Home.  It’s simple to make and big on flavor.  I made this on one of our “eat and run” nights, so I wasn’t home when my husband tried it but I got a text from him saying, “Dinner was so good!”  That’s the first time he’s ever texted about my cooking, so you know it must be good!  Here’s the recipe:  Salsa Verde Chicken Casserole
